Turmeric Glow Soup
Introducing my DB Approved Turmeric Glow Soup—a vibrant and nourishing recipe designed to support your well-being from the inside out. This anti- inflammatory soup features turmeric, ginger, sweet potato, and coconut milk for a comforting, nutrient-packed boost that helps calm inflammation and promote healthy skin, it’s also incredibly gut-friendly. Crafted with my holistic philosophy in mind, it blends immune-supportive ingredients with a creamy texture to create a warming, restorative experience that nurtures both body and spirit. Perfect for whenever you need a little extra glow and nourishment.
Ingredients:
• 2 tbsp extra virgin olive oil
• 1 medium onion, finely chopped
• 3 cloves garlic, minced
• 1 tbsp fresh ginger, grated
• 1 tbsp ground turmeric (or 2 tbsp fresh turmeric, grated)
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1/2 tsp black pepper (enhances turmeric absorption)
• 1 medium sweet potato, peeled and diced
• 1 medium carrot, peeled and diced
• 1 can coconut milk (400 ml, full fat for creaminess)
• 4 cups Bone Broth (homemade if possible)
• Juice of 1 lemon (for a hint of acidity and added detox benefits)
• 1/2 tsp sea salt, or to taste
• 1/2 cup cooked quinoa (for added protein)
• 1 handful fresh spinach
• Fresh coriander for garnish
Instructions:
1. Warm the Base: In a large pot, heat the olive oil over medium heat. Add the onion and sauté for about 5 minutes until translucent. Add the garlic and ginger and cook for another minute until fragrant.
2. Spice It Up: Stir in the turmeric, cumin, coriander, and black pepper, cooking for about 1-2 minutes until the spices bloom and become aromatic.
3. Veggie Power: Add the diced sweet potato and carrot, and stir to coat in the spice mixture. Pour in the bone broth and bring to a boil.
4. Simmer Away: Reduce the heat to a simmer and cook for about 20-25 minutes or until the vegetables are tender.
5. Blend for Smoothness: Using an immersion blender, blend the soup until smooth and creamy. If you prefer a chunkier texture, blend only part of the soup and leave some chunks intact.
6. Add Creaminess: Stir in the coconut milk and lemon juice, adjusting seasoning with salt to taste. Add the quinoa and let it warm through.
7. Greens & Garnish: Stir in the fresh spinach until just wilted, about 1-2 minutes. Garnish with fresh coriander before serving.
